Tasting notes
Deep cassis, cedar, graphite, and violet lift out of the glass, with a pencil-lead note underneath. Full-bodied and structured — blackcurrant and plum drive the middle, tannin firm but polished, a savoury herbal thread running through. Long, layered, mineral — the finish keeps unfolding for a full minute.
Pairing
Decant an hour. Reserve for the Rosh Hashanah roast, the Yom Tov standing rib, or any table where the wine is the point. Cellar for a decade if you can.
