Israel makes a small amount of genuinely good sparkling wine, most of it by the traditional bottle-fermented method rather than the tank method used for Prosecco. That is why the good ones have real texture and a fine, persistent bead rather than a big soft fizz.

What you are buying

Bottle fermentation means the second fermentation happens inside the individual bottle, then the wine rests on its lees before release. It costs more and it tastes like it: bread crust and green apple underneath the fruit.
