Rollover To Zoom
An Irish-style single pot still from a tiny independent distillery in the heart of Oregon wine country — double-distilled in copper, aged in new American oak, built to drink neat.
Mood: Quiet rainy evening, single ice cube clinking.
Tasting notes
Dark caramel and cherry with a brush of molasses cake, vanilla bean, and a faint nuttiness from the roasted malt. Oily and full from the pot still character; spiced fig, baked apple, and Demerara sugar through the middle with a savory cereal undertow. Long, warming, faintly cocoa-bitter close with cinnamon, toasted oak, and a final dusting of espresso.
Food pairing
Neat at room temp, with a single large cube, or built into a classic Irish coffee after dessert.
