Tasting Notes
Sour cherry, dried herb, tobacco leaf, a whiff of leather and forest floor. Medium-to-full bodied with firm, grippy tannins and a long, savory finish. Decant 45–60 minutes; will reward another 3–5 years in the cellar.
Food Pairing
Bistecca alla fiorentina, osso buco, lamb shank, aged hard cheeses, Sunday rib roast, mushroom-and-truffle pasta.
