A small-lot Cabernet from Sonoma's Chalk Hill AVA — volcanic ash and chalky white soils that lend the wine its name. Aged 21 months in new French oak, non-Mevushal, built for the cellar.
Mood: Bold, layered, slow-burning.
Tasting notes
Blackberry, anise, vanilla, sweet baking spice, and a green herbaceous lift. Full-bodied and structured, with concentrated black fruit, sugar-cookie sweetness, and firm tannin. Long, warming, with cocoa and toasted oak.
Food pairing
Standing rib roast, Yom Tov lamb shoulder, or a steakhouse cut for a milestone simcha.
