Rollover To Zoom
Hayotzer's flagship - the Auteur label carries Philippe Lichtenstein's silhouette, French for 'author', selected Galilee Cabernet aged fourteen months in oak.
Mood: The cellar bottle. The Yom Tov seudah where the host wants the top-shelf Hayotzer label, not the everyday one.
Our sommelier says
Deep purple. The nose is dense and lifted - ripe blueberry, blackcurrant, sweet spice from French oak, the warm-southern signature Lichtenstein gives the Auteur line. The fruit comes from Kerem Ben Zimra at 860 meters in the northern Galilee, so the body is full but the alcohol stays composed. Firm structured tannin from fourteen months in barrel, finishing long and layered. Aging potential a decade. Decant an hour for current drinking.
Tasting notes
Ripe blueberry, blackcurrant, sweet spice, soft vanilla. Full body, firm structured tannin, dense fruit core, oak-framed. Long, layered, age-worthy.
Food pairing
Standing rib roast, lamb shoulder, slow-braised short ribs, aged hard cheese (after the wait), Yom Tov seudah.
