Ephod Winery is the boutique Ashdod project of David Suissa, a French-trained vigneron who came out of the Bordeaux Grand Cru world to plant high-altitude Israeli reds. The Regesh is his entry Cabernet — serious bones at a weeknight price.
Mood: Structured, polished, warm.
Tasting Notes
Deep purple in the glass, with blackberry, black currant, and a thread of green bell pepper on the nose. Toasty oak, cinnamon, and dark chocolate fill in behind. Full-bodied on the palate, ripe black fruit and candied cherries cut by medium acidity and firm, mouth-coating tannins. The finish is long and spicy.
Food Pairing
Built for red meat — ribeye, lamb chops, slow-braised short ribs, and hard aged cheeses. Will reward an hour in a decanter.
