Petit Castel is the second wine of Domaine du Castel, Eli Ben-Zaken's pioneering Judean Hills estate west of Jerusalem at 2,400 feet. A Bordeaux blend — Cabernet Sauvignon, Merlot, Petit Verdot — hand-harvested from low-yielding vines and matured sixteen months in French oak.

Tasting notes
Blackcurrant, dark plum, cedar, graphite, a thread of dried herb. Full-bodied, dry, polished tannins; cassis and black cherry on a chalky frame, with oak-spice integration that gives it weight without weight. Long, mineral, savory, with a tobacco-leaf afterglow.
Pairing
Shabbos prime rib, slow-braised lamb shoulder, mushroom cholent, aged kashkaval. Decant an hour; built to age.
