Tasting notes
The nose lifts fresh green apple, lemon zest, and a light floral note over a soft mineral edge. The palate is dry and crisp, with tart apple, citrus, and a hint of white pear carrying through fine, persistent bubbles. The finish is clean and refreshing, with a subtle saline note and just enough weight to hold a course of food.
Food pairing
A natural for Shabbos kiddush, Rosh Hashana l'chaims, and Yom Tov toasts. Also beautiful with hot smoked fish, herb-roasted chicken, cheese boards, and fried Chanukah latkes.
