Rollover To Zoom
Jeff Morgan's Covenant Chardonnay from the 10-acre Scopus Vineyard atop Sonoma Mountain — whole-cluster pressed, barrel-fermented with native yeast, and aged sixteen months in French oak. The closest thing to white Burgundy in the kosher world.
Mood: Elegant, Burgundian, serious.
Sommelier’s note
“Native-yeast, whole-cluster, sixteen months in French oak — this is white Burgundy logic in a kosher bottle.”
Tasting notes
Lemon curd, white flowers, and a toasty French oak note with a flinty edge. Lush and elegant with green apple, citrus, and a creamy mid-palate from extended lees aging. Long, mineral, and beautifully balanced — fresh, never heavy.
Pairing
A natural with roast chicken, salmon, or a Shabbos lunch fish course.
