Rollover To Zoom
A single-clone Cabernet from Chalk Hill's volcanic-ash soils, aged twenty-one months in two distinct types of new French oak. Non-Mevushal and built for the host who decants before guests arrive.
Mood: Dense, structured, contemplative.
Tasting notes
Bold blackberry, anise, crushed herb, vanilla bean, and a whisper of sugar cookie. Full-bodied with firm tannins, deep cassis and dark plum, layered with French oak spice and a savory mineral spine. Long and warming with dark chocolate, baking spice, and lingering oak.
Food pairing
Standing rib roast, lamb shoulder, dry-aged steak, and slow-cooked cholent.
