Our sommelier says
Deep ruby. The nose is classic Cabernet on Judean Hills limestone - blackcurrant and dark cherry over cedar, with a herbal-mint lift the altitude gives. The palate is full-bodied, structured, with the firm but ripe tannin a varietal Cab should have. French oak adds spice and round vanilla without burying the fruit. Drinks well now with a thirty-minute decant; built to hold a few more years.
Tasting notes
Blackcurrant, dark cherry, cedar, mint, soft vanilla. Full body, firm ripe tannin, fruit-led, oak-framed. Long, composed, gently herbal.
Food pairing
Ribeye, lamb chops, beef brisket, aged hard cheese (after the wait), Yom Tov seudah.
