Gray Whale Gin is a California coastal craft spirit from Golden State Distillery in Sebastopol, distilled with six botanicals foraged along the Pacific gray-whale migration route, juniper from Big Sur, kelp from Mendocino, limes from Baja, fir from Sonoma, mint from Santa Cruz, and Central Valley almonds.
Mood: coastal, briny, botanical.
The G&T that tastes like the Pacific coast at sunset. Juniper up front, sea-salt lift, and a green herbal finish that never gets stale.
Tasting Notes
Bright juniper opens the nose, layered with citrus zest, mint, and a whisper of ocean minerality. The palate is smooth and softly oily, with sea kelp, fennel, and warm almond behind a piney lift. The finish is clean and coastal, herbal green notes lingering.
Food Pairing
A classic G&T with cucumber and a squeeze of lime, a Negroni, or a Salty Dog. Also excellent over rocks with a splash of tonic and a mint sprig for a Shabbos afternoon aperitif.
