Tasting Notes
Pale gold with green highlights. Nose is aromatic and layered — green apple, lemon zest, ripe pineapple, and unusual whispers of gunpowder and warm exotic spice. The palate is round and almost full-bodied with excellent acidity, orchard-and-tropical fruit, and a mineral spine. Finish is long, spice-tinged and lingering.
Food Pairing
Bring it out for a serious fish course — sea bass, halibut, or salmon en croute. Also lovely with roast chicken, dairy pastas, and mushroom risotto.
