Carmel Limited Edition is the winery's flagship red — an old-world-styled Bordeaux blend sourced from the high-altitude Kayoumi vineyards in the Upper Galilee. This is the benchmark bottle Carmel builds around.

Tasting notes
Blackcurrant, dark plum, and violet on the nose, with cedar, graphite, and Mediterranean herb from the oak. Full-bodied and layered — dark cassis fruit up front, then fine cedar tannin, tobacco leaf, and a lifting minerality through the mid-palate. Long, polished finish with grippy tannin and lingering dark chocolate.
Food pairing
Made for standing rib on Yom Tov, slow-braised short rib, entrecôte, and aged hard cheeses. Give it 30 minutes in a decanter before Shabbos.
