Rollover To Zoom
Deau XO is a blend of Petite Champagne and Fins Bois eaux-de-vie aged ten to fifteen years in small Limousin oak barrels at Distillerie des Moisans. Deep amber, elegantly refined, and Kosher for Passover — the after-dinner pour when the seder table quiets down.
Mood: Deep, refined, patient.
Sommelier’s note
“Pour it in a snifter, let it open, and stop talking for a minute — jasmine, dry plum and buttery vanilla unfold on their own schedule.”
Tasting notes
Jasmine and violet lift off a rich amber nose, with dry plum and cinnamon underneath. Refined and elegant on the palate — dried fig, honeyed pastry and a soft touch of oak carry the mid-palate. Long, smooth, well-balanced — vanilla, dark chocolate and gentle warmth linger.
Pairing
Neat in a snifter after the meal. Beautiful alongside dark chocolate, aged hard cheese, or a good cigar in the sukkah.
