Our sommelier says
The Committee's flagship—peated to roughly 55 ppm at malting, then aged a decade in first- and second-fill American oak. The bourbon casks keep it pale and lemony while the peat reek does the heavy lifting.
Tasting notes
Tar rope, lemon peel, espresso, brine, a quick flash of vanilla custard. Black pepper, charred pineapple, smoked sea salt, dark chocolate, kippers over a beach fire. Enormous and lingering—creosote, lime cordial, and a coal-smoke warmth that refuses to fade.
Food pairing
Dark chocolate, smoked bluefish, a thick ribeye, or simply itself by a fire.
