Tasting notes
Ripe black cherry and crushed raspberry with a curl of leather, dried thyme, and a touch of Mediterranean garrigue. Medium-bodied, juicy mid-palate of red plum and black currant, with cocoa nib and a mineral graphite line that keeps the Garnacha sweetness in check. Smooth tannins fade to a long savory close of dried herbs, tobacco, and a brush of toasted oak.
Food pairing
Roast lamb with rosemary, Sephardic chicken with prunes, a Shabbos lunch cholent, or aged Manchego.
