Rollover To Zoom
Dalton's Single Vineyard Zivon is a Cabernet Sauvignon from their organic vineyard in Zivon, Upper Galilee. Single-site farming, oak aging, and Dalton's serious winemaking craft — a terroir-driven flagship.
Mood: terroir-driven, organic, age-worthy.
Our sommelier says
"Single-vineyard kosher Cab is a small club and Dalton's Zivon is one of the best. Organic farming, careful winemaking, true site expression — the bottle to bring to a serious wine person who 'doesn't drink Israeli wine.'"
Tasting notes
Deep ruby-purple. Aromas of cassis, dark cherry, cedar, and warm spice. The palate is full-bodied and structured with firm polished tannins, layered dark fruit, and well-integrated French oak. Long mineral-driven finish.
Food pairing
Dry-aged steak, lamb chops, slow-braised brisket, aged hard cheeses, yom tov roasts. Decant 1–2 hours.
