Odem Mountain Winery sits at 1,100m on the slopes of Mount Odem — the highest, northernmost vineyard in Israel — founded by Michael and Idit Alfasi and producing kosher wine since 2007. The Volcanic Cabernet expresses the basalt soil and cool nights of the upper Golan, aged in French oak for true Cab structure.

Tasting notes
Ripe blackberries and cassis jam with toasty oak, vanilla, and a hint of dust. Full-bodied and concentrated with dried figs, sweet cherries, roasted herbs, and tobacco leaf. Moderately long with integrating tannins and a touch of sweet coffee and oak.
Pairing
Cut into a slow-roasted brisket or grilled lamb chops; also pairs with a Friday-night standing rib roast.
