From the Alfasi family's Mount Odem vineyard — Israel's northernmost and highest at 1,100m above sea level — the Volcanic Merlot is grown on basalt soil and aged a full year in French oak. Odem Mountain is fully kosher under OK supervision.

Tasting notes
Ripe black cherries, blackberries, roasted herbs, and toasty oak with vanilla. Medium- to full-bodied with very ripe black and red fruit, Mediterranean spices, and sweet oak. Moderately long with medium acidity and slightly chewy tannins.
Pairing
Roast chicken with thyme, beef short ribs, or a lamb kebab platter — also works with mushroom kugel.
