Psagot distills its XO brandy from estate wines in a copper alembic still and ages it twelve years in oak inside the ancient cave at the heart of the Psagot vineyard — a working winery from the days of the Second Temple. Since 2016 every Psagot product, brandy included, carries the Badatz Edah HaChareidis hechsher and is certified Kosher for Passover.

Tasting notes
Dried fig, raisin, toasted oak, and warm baking spice. Layered and silky with stone-fruit syrup, dark caramel, walnut, and clove. Long, mellow, and spice-laced with lingering oak and dried-fruit sweetness.
Pairing
Sip neat at the kiddush after a hearty Shabbos cholent; serve with dark chocolate and dried fruit for melaveh malka.
