Kosher Cava

Cava is Spain's traditional-method sparkling wine, made mostly in the Penedès outside Barcelona from Macabeo, Xarel·lo and Parellada. The second fermentation happens in the bottle, exactly as it does in Champagne, which is where the fine, steady bead comes from.
