Fermented in this bottle using the traditional method, as the label says — the same second fermentation in the same glass that Champagne uses. Golan Heights Winery has been making sparkling wine this way since the eighties, and it is still the best kosher example there is.
Mood: Fine, dry, celebratory.

Do not save it only for toasts. A dry traditional-method sparkler is one of the best food wines on any table.
Tasting notes
Red apple, strawberry and a fine bready, yeasty note from the lees. Dry and precise across the palate with a fine, persistent mousse. A long, dry, mineral finish.
Food pairing
Smoked salmon, sushi and fried appetisers. Excellent with a Yom Tov first course.
