Drappier is a family Champagne house based in Urville in the Aube, working chalky slopes with a Pinot Noir majority. The Brut Nature is bottled with zero dosage, letting the fruit and terroir speak without the veil of added sugar.
Mood: Chalky, precise, bone-dry.
Tasting notes
Green apple, lemon zest, brioche, and a flint edge. Bracing citrus and orchard fruit driven by fine, insistent bubbles and Aube chalk minerality. Bone dry, saline, and long, with no sugar to soften the mineral bite.
Food pairing
Perfect with oysters, cured salmon, or a plate of Yom Tov sushi.
