Clase Azul Durango is the entry point to their mezcal, and it looks nothing like the tequila. A matte black ceramic decanter, topped with a cap beaded by hand in the Huichol tradition. Inside is wild Cenizo agave from the high desert of Durango, roasted and left unaged.
Mood: smoky, mineral, quietly serious.
Tasting notes
Soft woodsmoke, roasted agave and wet stone on the nose. The palate is cleaner and sweeter than most mezcal, with cooked pear, a little green herb, and a mineral thread that comes from the spring water and the soil. It finishes dry, warm and faintly ashy.
Food pairing
Sip it neat and slowly, at room temperature, the way it is meant to be drunk. It cuts through grilled meat, smoked fish and anything charred, and it is the bottle to bring out when someone says they do not like mezcal.
