Clase Azul San Luis Potosí is the newest of the three, and the most distinctive. Made from green Salmiana agave grown at around six thousand feet near the Zacatecas border, and bottled in a deep red ceramic decanter with a hand-painted cap.
Mood: earthy, bright, high desert.
Tasting notes
Green agave, wet earth and a hit of fresh herb. The palate is vegetal and lively, with cucumber, green apple, black pepper and a saline mineral core. Smoke is restrained throughout. It finishes dry and long, with real grip at 46%.
Food pairing
Neat and unhurried. It works with ceviche, grilled vegetables, sharp cheese, or anything with lime and salt. The most interesting of the three, and the one to open when you want to argue about mezcal.
