Dalton bottles a handful of single-vineyard Cabernets, each named for the plot it came from. Zivon is one of them — a small parcel in the Upper Galilee, picked and vinified on its own so the site shows through.

Single-vineyard wines reward patience. Decant it, or keep it a year or two.
Tasting notes
Blackcurrant, dried herb and cedar. Concentrated and dry across the palate with a tight tannic frame. A long, mineral, dark-fruited finish.
Food pairing
Aged beef, lamb and rich braises. A bottle for the head of a Yom Tov table.
