A true Israeli ice wine made by freezing 70% Semillon, 20% Sauvignon Blanc, and 10% Riesling, pressing the ice out, then aging the concentrated juice 36 months in French oak. Rare, sweet, and built for the dessert course.
Mood: Luminous, golden, patient.
Tasting notes
Apricot preserve, honeyed pear, candied orange, dried apple. Concentrated and silky, layered with stone fruit syrup, beeswax, and lifted citrus acidity. Very long, sweet but never cloying, with a clean honey-citrus close.
Food pairing
Foie gras, blue cheese plate, apple tart, the seder dessert that deserves its own glass.
