Binyamina's flagship Bordeaux-style blend — 65% Cabernet Sauvignon, 33% Merlot, 2% Petit Verdot — from select Upper Galilee vineyards, aged 24 months in French oak. Named for the 250-year-old cave quarried in the Carmel Mountains that served as the winery's original cellar.

Tasting notes
Deep nose of cassis, black plum, cedar shavings, and a quiet thread of French oak vanilla. Full-bodied palate of blackcurrant and dark cherry layered with cocoa, tobacco leaf, and integrated Bordeaux-style tannin. Long, structured finish that holds the oak in balance and rewards a decant.
Food pairing
Pairs with prime rib, slow-braised brisket, or a Shabbos cholent with marrow bones. Equally at home with aged hard cheeses on the kiddush table.
