Barr Hill Tom Cat is a barrel-aged gin from Caledonia Spirits in Hardwick, Vermont — raw northern honey distilled with juniper, then rested in new American oak. The result drinks like a whiskey lover's gin: warm, resinous, honeyed, and unmistakably itself.

Tasting Notes
Aromas of raw honey, juniper, and toasted vanilla rise from the glass, with warm oak, dried orange peel, and a faint spice behind them. The palate is round and honeyed — honeycomb, oak, and pine — before a soft finish that closes on beeswax and warm cinnamon.
Serving & Pairing
Serves best neat, on the rocks, or in a Barrel-Aged Negroni; also makes an unexpected Old Fashioned base. Pairs with sharp cheese, cured meats, dark chocolate, or the tail end of a Motzei Shabbos meal.
