Palavani Merlot comes from the Kvareli district of Kakheti, the heart of Georgian wine country, where people have been making wine for roughly eight thousand years. It is a dry, oak aged Merlot fermented under kosher supervision by specialists brought in from Israel.
Mood: Plush. Grounded. Ancient.
Tasting notes
The nose opens on cherries and blackberry, with vanilla and oak underneath and a light smoky note alongside black currant. The palate is dry and medium bodied, with vanilla and roasted oak leading over soft, ripe tannins. The finish is warm and clean, with the barrel character lingering.
Food pairing
A natural pour with brisket, cholent, lamb, and beef, and it stands up to aged cheese and oven roasted duck. Also comfortable alongside Georgian dishes like khachapuri and slow cooked stews.
