Covenant Blanc de Blancs is a 100% Chardonnay sparkling wine from California, native-yeast fermented with zero dosage. Bone-dry, finely beaded, made the same way as the world's most serious blanc de blancs — just kosher. Jeff Morgan built Covenant on the idea that kosher wines should be made by exactly the same hand as the non-kosher versions, and this is the proof in the sparkling category.
Mood: Elegant, dry, ceremonial.
Tasting Notes
Green apple, pear, quince, and lemon peel on the nose. The palate is tangy and clean with the chalky finesse Chardonnay carries when it is left alone. The mousse is fine and persistent, closing on citrus and stone.
Food Pairing
Serve as the aperitif before the first course, or with smoked salmon, sushi, herbed roast chicken, hard cheeses, or fried appetizers. A natural pour for a serious toast at a simcha.
