From the historic village of Bat Shlomo, founded by Baron Edmond de Rothschild in 1889. The wine is fermented in concrete egg tanks — an unusual choice that gives the Sauvignon Blanc extra texture and tropical lift.
Mood: Tropical, textural, historic.
Sommelier’s note
“Concrete-egg fermentation on a 100% Sauvignon Blanc — the texture is the point.”
Tasting notes
Passion fruit, grapefruit, and fresh-cut grass with a tropical edge. Round and textured for a Sauvignon Blanc, with mango, lime, and a chalky mineral spine from the egg fermentation. Long, dry, and refreshingly mineral.
Pairing
A natural with a summer salad, gefilte fish, or a Shabbos lunch chicken cutlet.
