Rollover To Zoom
Ella Valley sits in the very valley where David stood against Goliath, and the estate's Ever Red is the everyday face of that hillside — Cabernet leads, Merlot rounds the edges, a splash of Petite Sirah adds grip.
A Judean-Hills red built for the Friday table: ripe but composed, generous without weight.
Sommelier's Note — The Ever Red is what Israeli estate wine sounds like when it stops trying to impress. It's the bottle you open before the soup, finish with the cholent, and don't have to think about — that's the compliment.
Tasting Notes
Black cherry and ripe plum lead, with a brush of cedar and dried herb behind. The Cab gives structure, the Merlot fills the mid-palate, and the Petite Sirah closes with a polished, easy-drinking finish. Medium-plus body, soft tannins.
Pairing
Roast chicken, brisket, herb-rubbed lamb, grilled portobellos, hard cheeses. A reliable Shabbos red across both meat and pareve courses.
