Dalton Pet Nat is an Upper Galilee sparkling wine bottled in mid-fermentation, so the bubbles are born in the bottle itself. A Semillon base (about 91%) lifted with a touch of Muscat of Alexandria - cloudy, low-sulphur, very alive.
For the table that wants its bubbly to taste like a vineyard, not a winery.
Pet Nat - short for Petillant Naturel - is the original method. Fermentation finishes inside the sealed bottle, trapping its own CO2 with no added dosage and no sulphur crutch. Dalton's version is one of the very few kosher entries in the category and one of the only fun, modern Israeli sparklers on the shelf.
Tasting notes
Grapefruit, green apple, and white peach, with floral and citrus-blossom lift. Big, lively bubble and a crisp dry finish. Slight haze in the glass is normal and expected for an unfiltered pet nat.
Food pairing
Brunch eggs, smoked fish, fried chicken, summer salads, sushi, or just cold on the porch. Serve well chilled.
