Shiloh's Secret Reserve is the winery's top Cabernet, grown in the hills of Samaria and aged in French oak. Non-mevushal, which is how the winery intends it to be drunk.
Mood: Big, dark, oaked.

Give it air. An hour open, or a decanter, and the oak settles back into the fruit.
Tasting notes
Blackcurrant, cedar and sweet vanilla oak. Full-bodied and firm across the palate, with ripe dark fruit and grippy tannin. A long finish of dark fruit and toasted oak.
Food pairing
Steak, lamb chops, and slow-cooked brisket. A Friday-night bottle for a serious meal.
