The Sexton is a triple-distilled Irish single malt from Old Bushmills country, blended by Alex Thomas, one of the few female master blenders in Irish whiskey. 100% Irish malted barley, aged four years in European oak ex-sherry butts, presented in a matte-black hexagonal bottle.
Mood: Dark, smooth, dram-ready.
Bartender's note
"A single malt with a sherry cloak. Dried fruit, honey, and a chocolate finish. Approachable neat, with an ice sphere, or as the base of an Old Fashioned that leans festive."
Tasting notes
Aromas of dried fruit, honeycomb, dark chocolate, and toasted almond. The palate is medium-full and smooth, with sherry-sweetness, raisin, orange peel, and a nutty depth from the ex-sherry oak. The finish is long, warming, with lingering chocolate and toasted spice.
Best served
Neat in a Glencairn, with a splash of water to open the fruit, or over one large ice cube. Also builds a serious sherry-forward Old Fashioned or hot toddy for the winter Shabbos table.
