Rollover To Zoom
A rare kosher wine-cask bourbon: Boone County straight bourbon finished in Dalton Winery casks from Israel's Upper Galilee, then bottled under OU supervision. Wine-cask whiskies are typically off-limits for kosher drinkers. This one is the exception.
Mood: Rare. Rich. Collaborative.
Tasting notes
The nose lifts caramel, vanilla, and dark red-fruit lift from the Dalton wine cask, over a warm oak edge. The palate is full-bodied and layered, with bourbon corn sweetness, dried cherry, cocoa, and a soft baking-spice note carried by the wine-cask finish. The finish is long and warm, with a lingering red-fruit note and a subtle rye-spice kick.
Food pairing
Serve neat or over one large ice cube. Beautiful after Yom Tov meat meals with dark chocolate, dried fruit, and hard cheeses. A conversation-piece pour for the whisky-loving Shabbos guest.
