Rollover To Zoom
DEAU XO is a blend drawn predominantly from Petite Champagne and Fins Bois eaux-de-vie, aged 10 to 15 years in small Limousin oak. A polished, orange-blossom-scented cognac certified kosher for Passover — one of the few XOs on the American frum bar that punches at this level.
Mood: Polished, floral, indulgent.
"Cognac that doesn't need a special-occasion excuse — but earns one when the ribeye's off the grill and the Yom Tov crowd wants something after dinner. And KFP is a rare bonus at this level."
Tasting Notes
Nose opens with orange blossom, candied peel, honey and warm Limousin oak. The palate is round and generous — dried apricot, fig, walnut, hazelnut praline and a whisper of leather. The finish is long, floral and gently spicy with a signature Fins Bois softness.
Food Pairing
Best neat in a snifter after a Yom Tov meal or seudah. Pairs beautifully with dark chocolate, aged hard cheeses, walnut rugelach, or a good cigar in the sukkah.
