Château Olivier is one of only six Graves estates classified Grand Cru for both its red and its white, farming limestone-clay parcels at the very heart of Pessac-Léognan. This is the kosher bottling of the red, a Cabernet-led Bordeaux blend built for the table now and the cellar later.

Tasting notes
The nose opens on cassis, black cherry, and pencil shavings, edged with the graphite and cedar that mark the gravelly Graves terroir. Medium to full-bodied, it layers ripe black and red fruit over finely grained tannins and a clean line of fresh acidity. The finish runs long and savory, turning toward tobacco and dark earth.
Food pairing
Pour it alongside a Shabbos brisket, a standing rib roast, or a board of aged hard cheeses. A wine of this structure will also reward another five to ten years of patience in the cellar.
