The Añejo is triple distilled and bottled from a single French oak barrel, with the barrel and bottle numbers written on the label by hand. USDA Organic, and aged to taste rather than to a fixed calendar.
Mood: Deep, oaked, rare.

The one to pour for someone who thinks they have tried everything. Almost nobody has had aged sotol.
Tasting notes
Vanilla, dried herbs and toasted French oak. Rich and rounded across the palate with the desert-herb character running underneath. A long, warm, oak-spiced finish.
Food pairing
After dinner, neat. Good with dark chocolate and with hard aged cheese.
