Sotol is not tequila and not mezcal — it is distilled from the wild desert spoon plant that grows across Chihuahua, and it takes about fifteen years in the ground before one is ready to harvest. Hacienda de Chihuahua has been at it since 1881.
Mood: Wild, green, mineral.
Tasting notes
Green herbs, wet stone and a faint pine note. Clean and mineral across the palate with a herbal, vegetal core. A dry, peppery finish.
Food pairing
Neat as an aperitif, or in place of tequila in a margarita for something more savoury. Good with grilled meat and with sharp cheese.
