Photo for reference. Vintage may differ from the bottle shipped.
The rested one — the same wild-harvested Chihuahua sotol, given time in barrel so the desert herbs pick up a layer of soft oak.
Mood: Herbal, rounded, warm.
Our sommelier says
The middle of the three. Oak takes the edge off the raw mineral character without hiding it.
Tasting notes
Green herbs over vanilla and light caramel. Rounded across the palate with the herbal core still clear under the oak. A warm, gently spiced finish.
Food pairing
Neat, or on a rock. Good beside grilled steak and smoked food.
