Rollover To Zoom
Le Grand Secret's Chablis Premier Cru is a serious Burgundy Chardonnay from the Beauregard 1er Cru vineyard, one of the appellation's most distinguished parcels. Unoaked, mineral, and precise, this is Chablis dressed for the yom tov table.
Mood: chiseled, mineral, ceremonial.
The white you open when the fish is dressed simply and the guest at the head of the table knows their Burgundies. Beauregard 1er Cru, kosher, no shortcuts.
Tasting Notes
Fresh lemon peel, green apple, and white flowers open the nose, with a defining wet-limestone note. The palate is taut and mineral, with citrus, chalky pear, and hazelnut cream at the mid-palate. The finish is long and saline, oyster-shell minerality carrying to a clean, dry close.
Food Pairing
A yom tov Chablis pour: perfect with roast turkey, poached salmon, sole meuniere, dairy meals with brie or aged gouda, or salt-cured fish. The Beauregard structure holds up to richer sauces than most Chablis.
