Rollover To Zoom
Saperavi is Georgia's flagship red grape and Khashmi is the Kakhetian sub-region where the fruit gains its deepest concentration. Shimon & Company, the only kosher winery in Georgia, bottles it dry and unadorned, ink-dark, structured, and food-hungry.
Mood: ink, iron, ancient.
The bottle that changes the conversation. Saperavi drinks like Malbec's older, wiser cousin, and Khashmi is the Kakheti address to know.
Tasting Notes
Blueberry, black plum, and dark cherry on the nose, with hints of iron, cured meat, and dried herbs. The palate is dense and structured, with cassis, mulberry, and warm forest floor framed by savory umami. The finish is long and mineral, tannins ripe and lingering.
Food Pairing
A perfect Shabbos steak pour. Excellent with grilled ribeye, slow-braised short ribs, cholent, roast lamb, or hard aged cheeses. Decant thirty minutes; the wine opens up considerably.
