Sommelier's note
Chacha is Georgia's answer to grappa, but softer at the edges — this Shimon bottling lands clean enough for the table and confident enough for the cigar.
Tasting notes
Lifted notes of crushed white grape, pear skin, and faint herbal hay rise from the glass. The palate is silken and warming, with orchard fruit, a whisper of vanilla, and clean grain. Long, dry, faintly floral, with a clean exit and no harshness.
Food pairing
Pour it neat after the cholent, alongside dark chocolate, or as a digestif beside Persian dates and salted nuts at a Melaveh Malkah.
