Tasting notes
Sea spray, smoked bacon, white pepper, fresh-cut grass, a faint coastal smoke. Cracked pepper, brine, malt sugar, smoked fish, a swirl of dried fruit. Long, warming, distinctly peppery—the famous Talisker 'volcano' on the back of the tongue.
Food pairing
Seared scallops, beef tartare, a hearty stew, or aged cheddar.
