Saperavi is Georgia's flagship grape, dark-skinned, deep, and structured in a way nothing else quite is. Palavani grows it in Kakheti and turns out a full-bodied kosher red that fits a Shabbos meat course better than most Cabernets.

Tasting notes
The nose lifts ripe blackberry, cassis, and dark cherry over a whisper of dried herbs and cracked pepper. The palate is full-bodied and structured, with black-fruit intensity, a light savory note, and firm ripe tannins that carry weight through the mid-palate. The finish is long, warm, and clean, with a lingering dark-fruit note and a subtle spice.
Food pairing
A natural fit for lamb, brisket, dry-aged steak, cholent, and Georgian khachapuri or khinkali. Also holds up to bold hard cheeses and slow-braised beef stews.
