One part arak, two parts water, then ice — in that order. Ice first and the anise oils seize instead of clouding properly.
Tasting notes
Sweet aniseed and liquorice. Clean and dry across the palate with the anise carrying all the way through. A long, cooling, liquorice finish.
Food pairing
Mezze, hummus, grilled fish and salty cheese. The classic table spirit for a long Middle Eastern lunch.
